    Yes, it may affect insulin sensitivity over time. I also do intermittent fasting (16/8) which help with Insulin Sensitivity and over that last few weeks (Other than Christmas) I haven't experienced weight gain - although it may take a long time to become insulin insensitive.

    Yes, that's a good idea. Stevia is great, it's what they mix it with that can have negative effects. I understand that Erythritol is safe to use and doesn't effect insulin.

    That's a good idea, I'm going to try that to clear my sinuses. Fortunately my T has usually been very mild - most noticeable at night - that's another reason I suspect inflammation link, since it's more time of day related and comes and goes in severity - which is how inflamation works as well.
